How to Defrost Wagyu

QUALITY GUARANTEE

Slaughtering and packing at certified USA export factories in Japan maintains the highest quality of Wagyu. Using a special film to pack the beef inhibits bacteria growth. Quick-freezing below -22°C/-30°F on the same day of packing the beef ensure freshness without aging.

HOW TO THAW

It is recommended to defrost the beef slowly in a refrigerator (0.5-2°C/33-33.3°F ) taking 2 to 3 days (for whole cut) and 1 to 2 days (for steak cut) in order to maintain the same freshness as fresh beef. The required thawing time depends on the season and/or size of the product.

DIRECTION AND CARE

The amount of drip depends on each loin and does not affect the quality. We DO NOT recommend rapid defrosting (for example at temperatures higher than 5°C/41°F ) in order ti prevent “meat purge” which significantly affects the taste and quality. Meat Purge includes water soluble myoglobin and amino acid.

Let’s start cooking

Step 1

Put oil into heated pan. Wagyu fat is good enough, but since Wagyu itself has fat, olive oil is better to use in this case. Put fresh sliced garlic and sear until the garlic becomes light brown color. Put the sliced garlic out of the pan (this is added to the steak).

Step 2

Place the meat into the pan to season the meat with oil (garlic flavored). To make the steak crisp outside and juicy in the middle, don’t lift the meat from the pan! If it is grilled on high heat, it burns quickly, so keep the heat like oil splutters.

Step 3

Check the color of the side grilled and once it becomes good brown, flip the meat and start grilling the other side of meat. At this point, the other side of meat is already heated during Step 2, you don’t need long time to grill this side.

Step 4

Once the meat is grilled enough, place the meat out of the pan and season salt lightly and keep it for some time. With this technique, Umami flavor goes evenly in the meat and temperature of the center of meat goes up. The ideal temperature of the center of meat is 58°C (136°F).

Let’s cook Grilled Japanese Scallop at home!

-Cooking procedures-

Put in a frying pan with butter, melt the butter over low heat, then add the scallops.

Season with salt and pepper, and once the scallops are cooked, sprinkle with soy sauce.

If the scallops can be eaten raw - sashimi grade, they are done when they are cooked and browned on the surface.

If they're not for raw consumption, after add soy sauce at the end, turn off the heat, cover, and leave for 30 seconds then serve!

Japanese Yellowtail “Buri”

Buri is called by different names including Hamachi as it grows. It's nutritionally rich in proteins, EPA, DHA, B vitamins, and vitamin D. Once unstable due to migration, advancements in aquaculture now ensure year-round availability.

Let’s cook Buri Teriyaki Don at home!

-Cooking procedures-

Buri Teriyaki Don

For 1 serving

①・Yellowtail: 2 slices

 ・Salt (for seasoning): a pinch

 ・Cooking sake: 2 tablespoons

②・Cooking sake: 2 tablespoons

 ・Mirin: 2 tablespoons

 ・Soy sauce: 2 tablespoons

 ・Sugar: 1 teaspoon (adjust to taste)

 ・Ginger: 1 teaspoon grated (optional)

① Salt (for seasoning) both sides of the yellowtail and let it sit for 15 minutes. Then, wipe off any moisture that comes out with kitchen paper. If you're concerned about the saltiness, you can rinse the yellowtail before wiping it with kitchen paper to remove moisture.

Heat oil in a frying pan (amount not specified). Place the yellowtail skin side down in the pan. When serving, the side that will be facing up should be cooked first. Once the yellowtail has developed a sear, flip it over. Add 2 tablespoons of cooking sake, cover with a lid, and reduce the heat slightly. Steam cook for 2 to 3 minutes. Adjust the cooking time depending on the thickness of the yellowtail.

② After opening the lid, use kitchen paper to remove any excess oil or moisture. Add A: 2 tablespoons of cooking sake, 2 tablespoons of mirin, 2 tablespoons of soy sauce, 1 teaspoon of sugar, and about 5cm of tube ginger. Increase the heat and let the liquid evaporate while coating the fish with the sauce. Keep moving the fish around in the sauce to prevent it from sticking. Be careful not to let it burn as the heat gets too high.

Tuna Mayo Onigiri

Japanese rice ball “Onigiri” with Tuna Mayonnaise

Recipe 1: [Tuna Mayonnaise (Makes 4 servings)]

• Canned tuna: 50g

• Mayonnaise: 25g

• Soy sauce: 5g

Recipe 2: [Tuna Mayo Onigiri (Makes 1 serving)]

• Tuna mayonnaise (from Recipe 1): 20g

• Cooked Japanese rice (Koshiibuki): 90g

• Salt: 0.5g

• Nori seaweed sheet: 1 piece

Cooking Instructions:

1. Combine ingredients from Recipe 1 to make Tuna Mayonnaise.

2. Mix salt with the cooked Japanese rice according to the amounts in Recipe 2. Place the rice into an onigiri mold, making a slight indentation in the middle.

3. Fill the indentation made in step 2 with 15g of Tuna Mayonnaise, then cover with the onigiri mold lid and shape the rice.

4. Remove the onigiri from the mold, wrap with nori seaweed, and top with 5g of Tuna Mayonnaise. Your Tuna Mayo Onigiri is now ready to enjoy!

Tori Kuro Onigiri

Japanese rice ball “Onigiri” with Tuna Mayonnaise

Recipe 1: [Chicken Karaage (Makes 4 servings)]

• Chicken thigh meat: 30g x 4 pieces

• Potato starch: 10g

• Oil: 500ml

Recipe 2: [Kurozu Sauce (Makes 4 servings)]

• Soy sauce: 15g

• Mirin: 15g

• Black vinegar: 15g

• Sugar: 5g

Recipe 3: [Tori Kuro Onigiri (Makes 1 serving)]

• Tori Kurozu An: 1 portion

• Cooked Japanese rice (Koshiibuki): 90g

• Salt: 0.5g

• Nori seaweed: 1 sheet

Cooking Instructions:

1. Follow Recipe 1 to coat the chicken thigh meat with potato starch and deep-fry in 350°F oil for about 3 and a half minutes to make Chicken Karaage.

2. Let the Chicken Karaage from step 1 rest for 2 minutes to drain excess oil while mixing Recipe 2 Kurozu sauce in another bowl.

3. Heat the Chicken Karaage and the Kurozu sauce from step 2 in a frying pan, coating the Chicken Karaage with the Kurozu sauce to make Tori Kurozu An.

4. Mix salt with the cooked Japanese rice according to the amounts in Recipe 3. Place the rice into an onigiri mold, making a slight indentation in the middle.

5. Divide the 1pc of Tori Kurozu An from step 3 into 4 equal portions.

6. Fill the indentation made in step 4 with 3 portions of the divided Tori Kurozu An from step 5, then cover with the onigiri mold lid and shape the rice.

7. Remove the onigiri from the mold, wrap with nori seaweed, and finally, top with the remaining portion of Tori Kurozu An. Your Tori Kuro Onigiri is now ready to enjoy!
